The Experience at Koele is one of my favorite courses.  Perfect conditions, gorgeous scenery, very isolated and the service is excellent.  A bit pricey ($250 per round), but you're at a Four Seasons Resort on a Hawaiian Island (Lana'i).

The Challenge at Manele is also very nice.  You will have ocean views and Bill Gates got married on the green of Hole #12 (a par 3 with the ocean on the left).
